Of all the usual ingredients in everyday cooking, perhaps rice offers the most possibilities: the number of recipes based on this white grain are countless, and the number of rice varieties means that each dish can seem completely different.
One of the varieties to keep an eye on is Canary Islands long grain rice, a type of national rice that has many possibilities and is increasingly in demand by cooking enthusiasts.
This rice has a short cooking time (16 minutes) and remains firm, allowing it to absorb all the flavor of the broth in which it is cooked.
There are many recipes in which this long grain rice is the star. One of them is baked rice.
Baked Rice: A Tasty Option for Family Meals
Family meals on weekends always lend themselves to preparing more striking and different recipes, without them having to be especially complicated. A baked rice with Rocío long grain rice can be the solution to surprise diners without having to spend the whole morning in the kitchen.
The recipe is quite simple and you could say it almost makes itself. You will need 100 grams of Rocío long grain rice per person, pork ribs, onion sausages, bacon, natural tomato, garlic, oil, salt, and saffron.
The first step is to lightly fry the ribs and, once golden, set aside the oil, put them in a liter of water, and boil them for about half an hour.
Meanwhile, cut the sausages into pieces and peel at least a dozen cloves of garlic and make slits in the middle so they release all their flavor.
Put the oil from the ribs in a clay pot suitable for the oven and heat over the fire without the temperature being too high.
In that surface, lightly fry the garlic, add the crushed tomato with a little sugar, and let it thicken and fry.
Now it's time to add the Canary Islands long grain rice and fry well. When the grains begin to brown, add the ribs and salt and let everything cook a little more over low heat. Add the water where the ribs have been fried and correct the salt. Also add several strands of saffron at this time.
All that's left is to add the sausage and put it in the oven at 250 degrees. It is important that the pot is practically on the floor of the oven. Once it starts to boil, the rice will 'drink' the broth in about 16 minutes, time in which you can have an aperitif with the family.
Once the cooking of the Canary Islands long grain rice is finished, remove from the oven and let it rest for about 5 minutes.
All that remains is to serve and taste the delight of this rich dish, made with local ingredients, which will reveal traditional and exquisite flavors to diners.
