The president of the Cabildo of Lanzarote, María Dolores Corujo, and the councilor of the Primary Sector, Andrés Stinga, attended this Monday, January 23, the inauguration of the international gastronomy congress 'Madrid Fusión 2023'. During the three days of the event, the island will exhibit its commitment to gastronomy and its varied proposals under the title of 'Lanzarote, fire and water. The cuisine of ingenuity'.
Nearly 125 representatives from the public and private sectors of the island will meet at the 21st edition of this globally recognized event, held from January 23rd to 25th. The Saborea Lanzarote stand in the Spanish capital will host more than 30 events, including product tastings, special dishes, wines, sweets and pastries, cheeses, demonstrations and interviews, among others.
President María Dolores Corujo pointed out that "the objective of our island in this congress will be to showcase volcanic cuisine and the variety and quality of unique ingredients that characterize us."
"Nature and the environment undoubtedly and necessarily influence our way of understanding gastronomy, and that perfectly homogeneous mixture is what we want to present to the world at Madrid Fusión, following Lanzarote's identity as the island of sand, ash, and trade wind humidity," Corujo highlighted.
For his part, the councilor of the Primary Sector, Andrés Stinga, detailed that "we will participate in Madrid Fusión 2023 with a complete program of experiential and sensory activities during the three days. In addition to the tastings at the stand, there are experiences on the Saborea España multipurpose stage, presentations in the wine classroom, and participation in the Madrid Fusión workshop room with the presentation of the workshop 'Taste Lanzarote: Volcanic products that build landscapes'."
Representatives from the business sector of Lanzarote, from the employers' associations, from the Lanzarote Wine Regulatory Council, from the Chamber of Commerce of Lanzarote and La Graciosa, as well as students from CIFP Zonzamas, will also attend Madrid Fusión 2023, demonstrating the interest of the new generations in gastronomy.
