The president of Saborea España, Susi Díaz, is a chef who, among other awards, treasures a sun from the Repsol Guide and a star from the Michelin Guide.

In an interview with the radio program Más de Uno Gourmet, on the occasion of the Saborea Lanzarote fair, Díaz is enthusiastic about the success of the fair, highlights the unique value of the island's gastronomic products and shares which are her favorites.

 

  • What were your sensations after landing in Lanzarote and at the Saborea fair?

I already knew Lanzarote, but the truth is that from the moment you land you know it is a unique place, with a unique landscape, that stays in your retina and you don't forget.

Regarding the fair, I would like to highlight how all the institutions have turned to make it a success. Also the large number of kids who have come to listen and learn about gastronomy with all the speakers and master classes.

 

  • It is said that Saborea has been one of the most important outdoor gastronomic fairs in Europe...

For sure, I have no doubt. I have seen a great atmosphere, people happy and eager to enjoy this wonderful festival. Also, with a great temperature, you have an advantage there, it's like always having an ace when playing cards.

 

  • How do you rate the gastronomic level of Lanzarote?

As president of Saborea España and as a cook, I believe that you have a tremendous amount of values. You have products that are unique and only exist here. That for me as a cook is very important.

Now we have to value those products and take them to the highest excellence so that people say: the best potato in the world is eaten in Lanzarote.

You have a unique product thanks to the land, which is so special. It gives incredible wines, and vegetables different from those found in the peninsula or in other parts of Europe.

You have to pamper that product, value it and then tell the world look what we have here so that people come and enjoy not only this temperature, this sun and these beaches, but also this very special gastronomy.

 

  • What is your favorite product from the island?

I always stick with the potato. In the kitchen, both the potato, the onion, and the olive oil are products that you need for most recipes. It is very difficult for me to find a good potato and here in any bar you eat two potatoes and you say: God, how can it be so good?

Also the shrimp here is unique, it has a taste of the sea, it is crunchy, it is sweet... There are many, but if you force me to choose I will stick with the potatoes.
