Luis Ramón Amorós: "In the new Puerto Naos location we will follow the line of the guachinches"

The owner of the Meridiano food and beverage supply service will open a location in the center of Arrecife in February where he will offer "lifelong menus, without fanfare"

Luis Ramón Amorós was born in Arrecife and grew up among stoves with his father, a cook in restaurants in the El Golfo area. After a life dedicated to working in the kitchens of numerous restaurants on the island, he decided to open the Meridiano catering service at the end of 2023.

In February, he will open a location in Puerto Naos where, in addition to the catering service, he will offer breakfasts and midday menus with traditional dishes in the purest style of the Tenerife guachinches, he explained in a recent interview with the radio program Más de Uno Gourmet from Radio Lanzarote-Onda Cero. 


 

  • Where are you from and how did you get started in the world of cooking?

I am from Lanzarote, from the Arrecife area. My father was a great cook and I was with him in the kitchens in the El Golfo area since I was little. At six years old, I would light the stoves for him. 

I also took a course with Germán Blanco and worked in several restaurants. I started as a dishwasher. 

 

  • How did the idea of creating Meridiano come about?

I worked in the ventorrillos with a relative and as a result people started asking me for catering for the weekends. First I did them in a relative's restaurant, but then I created Meridiano to have a larger infrastructure.

 

  • How long have you been doing this?

Since December 2023. It's my wife, me and our partner María. The three of us run the ventorrillos, the catering and the premises, which we will open the second week of February in Puerto Naos, near the monument to the fishermen. The place has spectacular glass windows and you can see the sea. 

 

  • What will be on offer at the venue?

We plan to continue offering catering, and also a breakfast menu with good coffee and a good traditional Lanzarote sandwich. 

At midday there will be menus with grilled fish and rice dishes, all with vine shoots. We want to follow the line of the guachinches of Tenerife without fanfare, with lifelong food. 

 

Is the catering also traditional food or are there more options?

We are open to whatever the client asks us for, always explaining to them how far we can go. Depending on the cuisine, we are not going to invent a Japanese catering because we do not have the capabilities or the technique. However, we can make Canarian, Mediterranean, Italian, French food...
