The Lanzarote Island Council presented the island's participation in the next edition of Madrid Fusión 2026 to the sector and the media this Monday, at an event held in the plenary hall of the insular corporation.

Dozens of representatives of producers, primary sector associations, wineries, cheese dairies, chefs, hoteliers, federations, and other key players – many of them young professionals – supported a presentation that demonstrated how Lanzarote currently has an active, organized sector willing to continue collaborating in a coordinated manner on promotional actions driven by the Cabildo through the Saborea Lanzarote brand.

Saborea Lanzarote, in strategic coordination with Saborea España, seeks to position the island at "the epicenter of national haute cuisine" at Madrid Fusión Alimentos de España, the country's most influential gastronomic congress, which will celebrate its 24th edition from January 26 to 28 at IFEMA Madrid under the slogan "The customer takes charge".

The President of the Institution, Oswaldo Betancort, expressly thanked the sector's involvement and the joint work that has been developed during the current term: "Today it is demonstrated that we have a committed sector, which understands that gastronomy is a strategic lever for the island's development," he stated.

Betancort positioned Lanzarote and La Graciosa as "benchmarks for a responsible tourism offering, where the necessary containment of mass tourism is accompanied by an unparalleled increase in tourist spending in the Canary Islands," the Cabildo assured. "We want tourism that directly benefits the citizens, that generates opportunities, employment, and quality of life. And gastronomy, linked to our territory, our products, and our identity, is key in that equation," stated the president.

For her part, the Minister of Economic Promotion, Nori Machín, highlighted the intense work carried out hand in hand with the sector to attend Madrid Fusión with what they have described as "an unprecedented expedition." "Lanzarote will travel to Madrid with more than twelve producers, eleven cheese dairies (for the first time), seven wineries, more than fifteen chefs, and numerous professionals who faithfully represent the entire value chain," Machín detailed, who described the sector's broad response to the event held this Monday as "a clear endorsement of the joint work we have been developing."

This 2026, the Saborea Lanzarote Festival returns with full force

One of the most relevant announcements of the day was the confirmation by President Oswaldo Betancort that the Cabildo de Lanzarote will present the Saborea Lanzarote Gastronomic Festival for the first time at FITUR - this Wednesday. The festival is celebrating its 15th anniversary and is returning with renewed vigor. For the island's main institution, the presentation of this Festival in Madrid is "a milestone that reinforces the destination's international projection and its firm commitment to gastronomy as a differentiating element".

Madrid Fusión 2026 will face next week the most international edition in its history, becoming a great showcase for national gastronomic tourism, with the participation of 17 reference destinations at the Saborea España stand, including Lanzarote, La Graciosa, Fuerteventura, La Palma, and Tenerife.
