The CEO of the Centers for Art, Culture and Tourism (CACT), Ángel Vázquez, spoke this Friday on Radio Lanzarote - Onda Cero to talk about the change of direction in the restoration of the Centers. "We cannot be restaurants that compete with private restaurants, we have to generate different experiences", he said.
"We will try to give a gastronomic experience", Ángel Vázquez advanced.
The new management of these cultural spaces wants to generate a change in the way of tasting the restaurants of the centers. Among the proposed measures, he has proposed "eliminating the menus, because we are not competitors of anyone private and we have to generate a gastronomic experience according to the place we have", he insisted. Once the "ideas mature", the changes will be developed in all the Centers, also in the Castle of San José, where the gastronomic offer had obtained good recognition.
In this sense, he stressed that a visitor "can have a spectacular photo, but if the experience is not good, that is the memory that remains".
Among the proposals presented by the counselor is the change in the use of the famous grill of the Fire Mountains. In this case, the new management plans to make greater use of the embers, heated by the heat of the volcano, to add new dishes such as "black pig or kid". With this idea, he seeks to make a tasting menu of the grill. "I think it is the strength that the Mountain has and it is not being used", he assured.
"We have to give much more quality to the tourist during the visit and that is why we have to shorten" the number of visitors, he revealed. The counselor explained that this change in the restoration must go hand in hand with distributing tourists in sections. "We have to organize the sections and the load capacity", he added.
During his intervention in the morning show Buenos días, Lanzarote, Ángel Vázquez insisted that the objective is to give priority to quality products and zero kilometer. "Logically, what is not here will have to be found outside", he explained.
In addition, he also plans to add air conditioning to the Fire Mountains. "The other day we had problems with a worker fainting because it was almost 40 degrees in the restaurant. It can't be like that", he advanced.
Tastings in the Centers
Ángel Vázquez has reported that in the Castle of San José they will work "with tastings and it will be done for periods". In this sense, he will try to attract "relevant figures from Spanish and world gastronomy, even foreigners who give master classes and generate an experience". The initial idea is to attract a recognized chef, who offers a public act and then maintain that menu for a while.
Meanwhile, in the kitchen of the Farmer's Monument he has imagined that "that cooking tradition is maintained", thus recovering Canarian dishes such as sancocho or papas arrugadas. "The essence must be local, autochthonous food and logically use that base for all the centers".
Likewise, although he plans to maintain local wines in the gastronomic offer, he is considering the possibility of having "as a second option wines from outside, especially because there is no wine from here". While he also plans to offer beer to "expand the range".
