Robert Kudler and his Arrecife bar, where he offers radically different cuisine every day

The chef explains in an interview the reasons behind his vegetarian Mondays, carnivorous Tuesdays, exotic Wednesdays, stew Thursdays and pasta Fridays

The Austrian Robert Kudler lived in Berlin where he worked as a high-precision carpenter and cabinetmaker until he moved to Lanzarote for family reasons. As he had experience in hospitality, he decided to open El Salsero, a neighborhood bar in La Vega, in Arrecife, very close to the Red Cross.

In an interview with the radio program Más de Uno Cultura of Radio Lanzarote Onda Cero, he explains the reasons why he offers such varied dishes depending on the day of the week.

 

  • How does an Austrian cook land on an island like Lanzarote?

Well, it's my mother-in-law's fault, she has lived here for many years, my wife said "we have to go to Lanzarote because my mother is getting old, she needs help". We used to live in Berlin.

 

  • And you set up a hospitality business...

My profession as a high-precision carpenter and cabinetmaker is a bit difficult here because you need a lot of machinery that is not available here, so as I had worked in hospitality before, I decided to open a bar in La Vega, it's called El Salsero.

 

  • What products can those who visit you find?

I have a very simple menu with sandwiches and subs, but at noon I always have a dish of the day, which varies a lot. I open from Monday to Friday from 7:00 in the morning until 8:00 in the afternoon.

 

  • What do you have each day of the week?

On Mondays I always make vegetarian food. Most people after heavy meals on the weekend look for something lighter on Monday.

On Tuesdays, as I have a hamburger restaurant in front, which closes on Tuesdays, I have decided to make hamburgers that day, but they are different, they are themed, based on countries around the world. I let a world map circulate, and depending on the country where my finger lands, I add some specialty or flavor.

On Wednesdays, we have more exotic foods and there are curries from India or Thailand, things like that. On Thursdays we go a little more to the neighborhood and offer stews or casseroles, something with a spoon. And on Fridays, as I am more tired, I say enough is enough and I make pasta (laughs).

 

  • I understand that you don't open on weekends, where exactly is the place?

Yes, I only open from Monday to Friday. The bar is on Santander street 4, very close to the Red Cross and the Insular Library.

 

  • You also often go to fairs...

Yes, the last one was the circus, where I had a food truck with fried sweet potato from here, from the jable. I also make my special sauces, such as guava alioli.
