Carmelo Aunión: “Lanzarote has become an icon of volcanic cuisine”

The gastronomic critic was on the island on the occasion of the latest edition of Worldcanic, where he saw "the power of universal gastronomy"

The gastronomic critic Carmelo Aunión, founder and owner of the communication agency Wimit International and the Hitcooking channel, was in Lanzarote on the occasion of the third edition of the world's volcanic cuisine festival Worldcanic.  

In conversation with the radio space Más de Uno Gourmet, Aunión defines Worldcanic as "an intelligent umbrella with which to give visibility to the gastronomy of Lanzarote, which has become an icon of volcanic cuisine.”

"There are many volcanic cores throughout the world, but Lanzarote has become an icon of this line of cuisine for three years in a row, which I think is very intelligent," he explains.

Aunión also highlights the places on the island that give context to volcanic cuisine, such as Los Jameos del Agua, where the event was inaugurated. "I, who have come on all three occasions, always say that I cannot convey in a single photo the magnificence and beauty of this place, you have to come and see it," says the gastronomic expert. 

Regarding the culinary quality of the dishes during the festival, Aunión says he has seen "the power of universal gastronomy with volcanic thematic values" and considers that in Lanzarote there are all kinds of chefs: more traditional, more avant-garde, people who like to go slowly, others who like to do very powerful things..."

For all of them, Aunión highlights the importance of generating visibility for their proposals: "After all, what they need is for people to see and understand this type of action."
