Severiano Sánchez discovers the secrets of good ham carving in Lanzarote

During Friday morning, Severiano Sánchez, master of ham carving, participated in a conference in which he explained to all attendees the execution of this technique. The event, organized by the Training and Employment Orientation Plan, PROMOTEO at the Apartotel Fariones in Puerto del Carmen, brought together more than 30 attendees, including chefs and hospitality professionals, interested in learning about the skill of ham carving.

The day began with an explanation about the Iberian pig culture. The master cutter sought the participation of those present at all times, as the sessions were planned in a practical way. To do this, he used various pieces of ham with which he demonstrated his technique.

Severiano Sánchez is currently one of the most prestigious cutters. With almost 30 years of experience, he has attended the royal wedding of the Prince and Princess of Asturias as a cutter, has given training courses for cooks at the Royal Palace of La Zarzuela, and has traveled to numerous international food fairs.
