El Grifo will produce all its 2020 vintage wines with wild yeasts extracted from its vineyards

The winery began producing some of its references using this system last year, such as the 2019 Dry Volcanic Malvasia Collection.

El Grifo will produce all its 2020 vintage wines with its own yeasts, extracted from its vineyards. This is a system in which they select, from different plots on the island, a set of yeasts, promoting biodiversity to then ferment all their musts with this diverse pool of saccharomyces. This process respects the typicity and character in the wines, in addition to enhancing the naturalness in their production. The century-old winery already used this method last year for the production of some of its references, such as the 2019 Seco Colección.

The winery has been in full harvest season since July 15. El Grifo has been one of the first wineries to start this harvest, which in 2020 has started a little earlier than usual. Despite the unusual situation that is being experienced due to the crisis caused by Covid-19, the harvest is progressing naturally and the grapes are arriving at the winery in perfect condition. Thus, although it is estimated that there will be a lower volume of harvest this year, the excellence of the grape is not being diminished.

Therefore, Bodegas El Grifo will continue to offer wines with a marked character and personality for another year. Proof of this is its reference Malvasía Volcánica Seco Colección 2019, which last July was awarded a Gold in the 34th edition of the Baco Awards. The award was given to him in this prestigious event, held by the Spanish Union of Tasters.
