The councilors of Agriculture and Environment of the San Bartolomé City Council, Raúl de León and Alexis Tejera respectively, recently visited the facilities of the José María Gil mill, which on July 19 returned to grind wheat and grains to turn them into gofio.
As explained by the City Council, two business women have managed to put it back into operation and make "the street smell of milling and gofio again." The councilors took advantage of their visit "to chat for a while" with them, to share "not only time and memories, but also space in such an emblematic place as the mill of Don José María Gil, and to be able to have in their hands this delicacy of our traditional gastronomy, which is freshly ground gofio."

From the City Council they point out that, "although the new generation that has strongly committed to this project, recognizes that there is still a long way to go" as a craft industry, as an educational center "protecting and fighting for heritage", as an interpretation and dissemination center, and especially as a social center to meet and share as in the past, also "these days of July have been important, in which after much work part of this project that gives the whole street the smell of gofio is visualized".
The councilors wished "all the success in the world in this enthusiastic project" of which they affirm that "many other people have been infected who have come to collaborate, to promote our traditions and preserve our heritage, as well as to bet on this support to the primary sector". "Hearing that great stone heart beat again is priceless", concludes the City Council.
