One of Lanzarote's star products is carabineros from La Santa (Aristaeopsis edwardsiana), crustaceans that the Olivares family fishes to bring to the tables of the best restaurants. Now, the carabineros from La Santa will be part of Pope Leo XIV's menu during his visit to the Canary Islands.

Carlos Olivero is a member of one of the families dedicated to fishing and selling this product, who discovered the existence of specimens on the coast of La Santa during the Covid pandemic, in 2020, even though many people believed that they would not be able to find this coveted crustacean in that area to make a living from it.

In an interview with La Voz, he revealed that a cooking school in Gran Canaria contacted them to place an order for these crustaceans, although they have not yet been told the quantity, which they will know in the coming days.

The Olivero family received this order with surprise. "We didn't expect it at all, even though many famous people have already tried it, but the Pope trying the carabineros from La Santa is something you don't expect," he said. The family sells its product both inside and outside the Canary Islands, and people like the President of the Government of Spain, Pedro Sánchez, former president José Luis Rodríguez Zapatero, or the President of China, Xi Jinping, have tried this red gold.

Regarding the price, one kilo of carabineros costs 80 euros, although Olivero emphasizes that it is a low price for the work involved and the price of other businesses that sell them for up to 140 euros per kilo and frozen. In their case, all the product they market is fresh. "You can't compare our product with what they sell in fish markets," he assures.

The carabineros from La Santa are caught at a depth of between 800 and 1,000 meters, and the Olivero family devised exclusive fishing traps for their capture to avoid damaging the product. Carlos Olivero indicates that the fishing trips begin at 04:00 AM and end at 02:00 PM, where they can catch up to sixty kilos, although it depends on the day.
