Lanzarote's gastronomy and wines conquer Madrid Fusión 2025

Among other proposals, Saborea Lanzarote has installed for the first time a specific space for the island's wines and has proposed a demonstration by the first Michelin-starred chef in Lanzarote, Rubén Cuesta

Saborea Lanzarote has conquered the Madrid Fusión International Gastronomic Fair with "a unique exhibition of its culinary creativity, its rich tradition and its volcanic products of excellent quality", they highlight from the Cabildo de Lanzarote.

Between January 27 and 29, the gastronomy of Lanzarote and La Graciosa has been accompanied by an innovative experiential space in the Wine Edition section, where seven wineries on the island present the uniqueness of their volcanic wines through commented tastings.

One of the most outstanding moments of this edition of Madrid Fusión has been the workshop-tasting entitled "The cuisine of ingenuity: The landscape of Lanzarote on the plate", in which the Lanzarote chefs Jon Pérez (Nakai), Santi Falcón (Hotel César), Daniel Jiménez (La Tegala), Vicente Rodríguez (Hotel Seaside Los Jameos), Jonay Perdomo (Casa Carlos), Gonzalo Calzadilla (Isla de Lobos) and Adelia Ramírez (Adelia Canarias), joined their talent to show the creative potential of the island's products.

Another of the most relevant moments was the showcooking-tasting of chef Rubén Cuesta, from the Kamezí restaurant, who recently obtained the first Michelin Star in Lanzarote. On the 360º Hub stage, Cuesta offered a fascinating gastronomic workshop in which he presented his tasting menu.

Lanzarote's presence at Madrid Fusión has been distributed between the Saborea Lanzarote stand and the spaces of the Gastronomic Classroom, the Wine Classroom and the Multipurpose Classroom. The public has been able to enjoy a varied offer of cuisine sweets, appetizers, wines and liquors, as well as local products such as potatoes, tomatoes, artisan goat cheese, fruit jams, gofio shortbread or Lanzarote Designation of Origin wines. 

Within the framework of this fair, the 250 years of the El Grifo winery, the oldest in the Canary Islands and one of the ten oldest in Spain, have also been celebrated. This fact was commemorated in the Wine Classroom with a special tasting that highlighted Lanzarote's legacy and wine-making excellence.

 

Commitment to gastronomic excellence

The president of the Cabildo de Lanzarote, Oswaldo Betancort, during his visit to Madrid Fusión, highlighted the importance of events such as this to promote the island's gastronomic and wine heritage. "We have managed to stage the excellence of our wines in this magnificent volcanic wine tunnel that, for the first time, is presented at Madrid Fusión, and where each winemaker has the opportunity to show the greatness of their work. This space reflects the unique value of our wines and the richness of our land."

Betancort also underlined the Cabildo's commitment to the enogastronomic sector. "We work to promote the commercialization of local, seasonal and very high quality products, as well as to promote training and professionalization of the sector. Our priority is to guarantee generational change and position Lanzarote as a gastronomic benchmark at an international level", he stressed.

The Lanzarote president also took advantage of the visit to Madrid Fusión to hold various work meetings with companies and professionals from the enogastronomic sector with the aim of strengthening alliances and planning future initiatives.

Among these meetings, the meeting held with the manager of Eurotoques, Mayre Modrego, stands out, which served to address the preparations for the next edition of Diálogos de Cocina, an event that will soon bring together the entire enogastronomic sector of the island. This forum will serve to promote culinary talent and analyze emerging trends in the sector, consolidating Lanzarote as a benchmark in gastronomic innovation.
