The public hospitals of the Canary Islands Health Service will offer special menus during the celebration of the Christmas holidays so that admitted people can enjoy the recipes that the kitchen service professionals will prepare during Christmas Eve and Christmas.
Since admitted people have different pathologies, the menus prepared will follow medical guidelines and will be adapted to the nutritional needs of the patients. Therefore, the meals will be adapted in different versions, such as, for example, for people with diabetes, hypertension or who must follow low-fat or astringent diets.
The patients of the Doctor José Molina Orosa University Hospital will enjoy a menu for Christmas Eve dinner that includes seafood soup as a first course, pork sirloin medallions with apple sauce and a garnish of potatoes with a sauté of carrots and garlic, as a second course and, for dessert, San Marcos cake and a Christmas assortment.
The Christmas Day meal offers patients a pumpkin and orange cream, followed by a Supreme fish in seafood sauce with turned potatoes, to finish with a Christmas log as dessert.
Rest of the hospitals in the Canary Islands
At the Insular-Maternal and Child University Hospital Complex, for Christmas Eve dinner, green asparagus cream, cod loin with seafood sauce, baker potatoes and baby carrots will be served, and for dessert, a selection of nougat. During the lunch on December 25, patients will be offered seafood soup as a first course, braised cheek with mushroom sauce and mashed potato rosette as a second course, and almond cake for dessert.
The Dr. Negrín University Hospital of Gran Canaria will offer its patients for the traditional Christmas Eve dinner Castilian soup or grandmother's vegetable cream as a first course. As a second course, truffled turkey with Vichy carrots and Lyonnaise potatoes, turkey pie with Lyonnaise potatoes or spinach and mushroom crepes, while for dessert coffee mousse, tangerines, apple sauce or blueberry jelly will be offered. Each tray will include a box with individual portions of Christmas assortment and a Christmas greeting.
In addition, the meal on December 25 will also be special for admitted patients, since among the dishes they can taste is leek or white zucchini cream, as well as Biscayan-style cod or tomatoes stuffed with rice, raisins and onion.
Patients at the Canary Islands University Hospital Complex (HUC) will have broccoli cream with toasted almonds, turkey stuffed with Parmesan mashed potatoes and vegetable stew for dinner, and apple pie for dessert. The next day, Christmas Day, the menu will consist of sea salad and pork sirloin with Pedro Ximenez, vegetable bundle, parmentier potatoes with bacon and onion. For dessert, they will enjoy ice cream or fruit puree.
The Nuestra Señora de Candelaria University Hospital will have a special menu for its patients during this festive season. The Christmas Eve dinner will consist of Mediterranean salad or Jerez poultry cream as a first course and supreme pompano with American sauce as a second course. In addition, for dessert, patients can taste a passion fruit cream and Christmas delicacies. Likewise, Christmas lunch will be made with a stew soup as a first course, beef sirloin with mushroom sauce with baker potatoes as a second course and nougat sweet for dessert.
At the General Hospital of Fuerteventura, for Christmas Eve patients will taste shrimp cocktail and vichyssoise as a first course, salmon in coconut sauce with spinach-stuffed mushrooms and baker potatoes or sirloin with stuffed mushrooms as a second course and, for dessert, fruit jelly. For Christmas Day, the menu will consist of beef soup as a first course, peppered beef sirloin as a second course and chocolate mousse as dessert.
At the General Hospital of La Palma, patients will taste varied croquettes on December 24, Reina consommé as a first course, Christmas roll with broccoli and parsley potatoes as a second course, and Christmas sweets for dessert. On Christmas Day there will be stuffed eggs as a starter, fish and seafood soup as a first course, peppered beef sirloin with sautéed vegetables and golden potatoes and, for dessert, Christmas sweets.
At the Nuestra Señora de Guadalupe Hospital, for Christmas Eve the scheduled dinner will consist of seafood cream, Strogonoff sirloin with parmentier and padrón peppers, and for dessert, nougat mousse. On Christmas Day the menu will consist of chicken soup, as a first course, salted wreckfish loin with sweet potato and green mojo, as a second course and, for dessert, tiramisu.
At the Nuestra Señora de los Reyes Hospital, fish and seafood soup will be served for Christmas Eve dinner, as a second course, pork sirloin in apple sauce with mashed potatoes and, for dessert, lemon mousse. For lunch on Christmas Day, soup with croutons, sweet potato delicacies with cod and vinaigrette will be served, and for dessert, cheesecake.
